Evason Ma'in Hot Springs & Six Senses Spa introduces the Zarb at the Olive every Thursday night from 8.30pm.
Zarb is the traditional Bedouin style of cooking using an in-ground, sealed charcoal-fired pit. The Bedouin chef prepares ample platters of succulent lamb, chicken and whole root vegetables that are then lowered into the ground for a duration of up to 3 hours. After the hours of slow cooking, the steaming Zarb is removed from the pit to reveal a meal punctuated by the tantalizing aroma ofherbs and spices.
The Zarb is both prepared and consumed the traditional way - communally. The Bedouin chef serves the aromatic feast under a lamp-lit arabian tent or for more privacy, a private, candlelit table amongst the olive trees, overlooking the hot spring falls that Ma’In is known for. Waiters all dress in Bedouin attire and an Oud player accompanies dinner to complete the authentic experience.
